Slicing

                                                                                              At first glance, RubisTierra Iberian ham is long and slender, with a thin cane and a general shape which tends to be longer than it is wide. Cutting RubisTierra ham, always in thin slices, appeals to the five senses. It starts with the uncovering of its distinctive streaked and marbled appearance combined with a fluid, iridescent and pink greasy texture. This rosy fat indicates sufficient infiltration of the acorn which crystallisation shows up on the slices in the form of tiny white spots.  

The aromatic richness of RubisTierra ham is the result of a subtle blend of flavours that recalls the clayey soil and the Mediterranean and warm flavours of our meadows.

Below we show the four most important steps to follow in the process of cutting a high-end Iberian ham.

  1. Place the ham on the stand with its hoof facing upward.
  2. Prepare the ham by removing with a wide-bladed knife the outer fat layer on the top and the sides of the piece.
  3. Start to cut thin slices to the desired length, carving a flat surface that must cover the width of the piece.
  4. Reserve some clean slices of the outer flat layer to protect the cut when you take a break.

Storing

  1. Remove both packaging layers upon reception.
  2. Hang the ham vertically by the rope on its hoof and place a plastic or a dish to collect its drip.
  3. Store in a cool place at room temperature. The kitchen can be a good option.
  4. Avoid contact with any object or surface.
  5. Avoid leaving the ham near a source of heat or direct light.
  6. Smear with olive oil to protect until final consumption.

Packaging

  1. Leave the packaged Iberian ham unopened in the refrigerator until its consumption.
  2. Vacuum-packed ham can last up to 3 months without opening.
  3. Remove from the refrigerator and packaging 45 minutes before consumption.
  4. Separate each slice, place on a dish at room temperature and leave it to breathe until it is served. 
  5. Remaining slices can be placed back inside the packaging and fabric cover in the refrigerator.
